When added to water, potassium sorbate produces sorbic acid, an acid found in many processed foods. Potassium sorbate is used primarily as a food preservative. Its main purpose is to extend shelf life by preventing mold, yeast and bacterial growth.
Functions: It is used as preservative in lots of food products such as cheese, yoghurt, sour cream, mayonnaise, white egg, seafoods, soft drinks, juices, frozen and canned fruits, fruits used in ice cream and confectionary, fruit jellies, jams and bakery products.
